  16. This is now my go to recipe and method for smoking beef ribs. Only difference is I rest them overnight coated with some kosher salt and montreal steak spice. Absolutely LOVE the wrap juice. Smoked with cherry/hickory.

  17. That membrane is still going to block flavors from getting into the meat. Would you suggest either poking holes through with a fork or splashing from one end to the other across the bones to let in the flavors and still hold the ribs together?
